This soup takes no time to make, stores really well, and acts as a great base for customizing with additional spices. I added walnuts and basil when I made it. It’s satisfying, and stores well, so make a big batch that you can refrigerate for dinner another night of the week as well!
This soup may look plain, as it is really just cauliflower and spices but it is simple and pure. It is warm and adding a drizzle of high quality extra virgin olive oil makes this soup perfect. But, if you are looking for a little bit of complexity, add things! Look for other seasonal spices, or add some turmeric fora little interest!
